Breakfast tortillas

Ingredients
8 egg whiltes1 egg1/4 c. chopped onions1/4 c. diced red pepper1/4 tsp. cumin1/4 tsp. garlic powder3/4 c. grated cheddar cheese1/2 c. homemade salsa 8 small tortillas
Directions
Saute onions and red pepper in a large frying pan. Beat egg whites and egg with seasonings. Cook eggs with sauted vegetables until well done. Take 4 large or 8 small tortillas and divide egg mixture onto each tortilla. Top with 2 tbsp. grated cheese and roll up and place in a baking dish. Top with salsa and additional grated cheese. Cover with foil and bake at 350 degrees for 25 minutes. Let set for 5 minutes before serving. Serves 4, 2 tortillas per serving. Good for breakfast, lunch or a light supper.

    As mentioned in the recipe, 2 small tortillas is a serving. If using the larger size, then one tortilla is a serving.
