Turkey with Leeks, Tomatoes & Mushrooms

Ingredients
1 lb of ground turkey3 leeks, wash & chop in half and then slice in half rounds1 lb of mushrooms sliced2 Roma tomatoes, sliced in half and then cut lengthwiseOlive OilSalted butterMrs Dash Garlic & Herb
Directions
Cook leeks & mushrooms on low with butter & olive oil till soft. Put on lid to pan to sweat. Set aside. Cook meat until done. Drain meat and add mushrooms & leeks & roma tomatoes. Add spices and simmer until all ingredients have melded flavors. (about 5-7 minutes)

    I made this exactly to the recipe and found it to be quite good. My DH enjoyed it as well but added extra salt. He noted that it would be very good with some fresh spinach added. Will try that next time. - 7/18/10
