Chicken and Brown Rice Casserole

Ingredients
16 oz diced cubed cooked chicken breast (about 3 cups)1 1/2 cup cooked brown rice1 cup diced celery1/2 cup chopped walnuts1 can Campbell's Healthy Request cream of chicken soup1 tbsp dried minced onion1/2 tsp black pepper1 tbs lemon juice3/4 cup lowfat mayo with 1/4 cup water added3 hard boiled eggs
Directions
1. Combine first 8 ingredients in a large bowl.

2. Combine mayo and water and stir well with wire whisk until smooth.

3. Add mayo mixture to chicken mixture.

4. Gently fold in chopped egg and spoon mixture into an 11x7 inch baking dish, lightly sprayed with cooking spray (ie. PAM)

6. Bake in 400 degree oven for 15 minutes.
