1 large stalk celery ,chopped chunk size2 green zuchini cut in round slices chunk size2 yellow squash cut in round slices chunk size1.5 lbs mahi mahi ( or catfish etc....)2 lbs shrimp peeled & deviened 2 tbs minced garlic2 medium yellow onions cut chunky1 1lb can of petite diced tomato's (2 cups)2 single serve cans tomato juice low sodium
makes 20 cups
chop all veggies ,saute in 2 tbs olive oil , add canned diced tomatoes ,tomato juice, then shrimp and cubed mahi mahi . cook 30-45 min. serve w/ brown rice season to taste.
