Zucchini Banana Bread

1-1/2 cups of flour or gluten free flour1/2 C. splenda1/4 C Splenda sugar for baking1/2 teaspoon each of baking powder, soda, vanilla and salt1 teaspoon cinnamon1 egg1 C mashed bananas1/4 cup oil1/4 cup applesauce1 C finely shredded zucchini1/2 teaspoon vanilla1/2 C chopped walnuts.1 T brown sugar.
In a large bowl beat egg until creamy, add sugars, spices, salt and vanilla. Add oil and applesauce. Beat in bananas and zucchini. Add flour and nuts and well mix.
Put in a large loaf pan coated with cooking spray. Bake at 325 for 40-50 min or until toothpick comes out clean.

I don't think this recipe is complete. How much oil and applesauce do you use? What spices? They aren't listed. - 7/13/10

Sorry, actually this wasn't to be posted, but I will go back and look at the recipe. I had to stop before I finished it. It was very good. I am out of state right now and won't be home until Thurs. Recipe has been corrected, but now I noticed I had added the vanilla twice. Omit one of them.
