Blueberry bread

Ingredients
2 eggs1 cup white sugar1 cup milk3 tablespoons vegetable oil3 cups all-purpose flour1 teaspoon salt4 teaspoons baking powder1 cup fresh blueberries1/2 cup chopped walnuts (OPTIONAL - I don't use them)
Directions
Mix together beaten eggs with the sugar. Add milk and melted shortening or vegetable oil.

Sift together flour, salt, and baking powder. Combine mixtures, stirring only until blended. Carefully fold in fresh or frozen blueberries and broken walnut pieces.

Pour into greased 5 x 12 inch loaf pan. Bake at 350 degrees F (175 degrees C) for 50-60 minutes.

Cool in pan but try to turn it out of pan before it is totally cool. It will be easier to remove.

    Magnificant!! I made this last night. Used olive oil instead of vegetable oil. Other than that did everything as the recipe suggests. LOVED IT!!! Only problem is I ate two pieces right before bed with a bit of butter on them. OUCH!! - 6/27/11

    Love this bread!!! My guests said they loved it becuase it wasn't too sweet, or too dense. I added an extra 1/2 cup of blueberries (Fresh from Maine!) and a tsp of vanilla. - 8/8/10
