Spinach & Rice StirFry for 1

Ingredients
*Spinach, cooked -1 cup White Rice, long grain, cooked -1 cupBell Pepper - 1 tbsp Onions, raw - 1 tbsp choppedSalt - 1 tsp Freshly ground Pepper - 1 tsp Olive Oil - 2 tbsp Butter, salted -1 tbsp Mushrooms, fresh - 2 large button variety
Directions
Wash fresh spinach. Chop bell pepper, onion and mushrooms.

Heat olive oil and butter. Saute' mushrooms and onions till tender and golden brown. Add fresh spinach, cook till limp. Add salt , pepper and left-over cooked rice. Heat till rice is hot.
