Reduced Fat Zucchini Bars with cream cheese frosting

For Bars:3/4 c. egg substitute2 c. unpeeled grated zucchini1/4 c. oil3/4 c. unsweetened applesauce2 1/2 c. whole wheat flour2 c. granulated sugar1/2 t. baking powder1/2 t. salt2 t. cinnamon1/2 t. baking soda1/2 c chopped nuts (optional - no in nutritional calculation)For Frosting:1/4 c. soft butter1 T. soy milk2 c. powdered sugar4 oz. reduced fat cream cheese1 t. vanilla
For bars:
Mix ingredients in order, by hand or by mixer. Pour in greased (11x 17) pan. Bake at 350 for 30 minutes. Frost when cooled. Cut in bars that are approximately 2.75 in. x 2.42 in.
For Frosting:
Mix all ingredients and spread on cooled bars - should be stored in refrigerator or cool place.
