Directions
2 C pinto beans3 qts water1 T olive oil1lb. ground hamburger/chuck1 large onion, diced2 cloves garlic, minced4 large stewed tomatoes (or 1 large can), chopped up2 C V8 Juice or tomato juice2 T Chilli power1 T Paprika
Cook pinto beans in 3" of water. I cooked them in a crockpot overnight. The beans need to be tender and will probably take about 2-3 hours over the stove. Make sure to check on them and add water when needed.
Heat oil in skillet on Medium-High heat.
Drain water from beans (leaving about 1/2C of water).
Put beans in the skillet and smush to make a refried bean.
Put beans in a pot on stove on Medium heat or a crockpot on High with V8 juice.
Brown ground beef with garlic and onions.
Stew 4 large tomatoes on High heat while cooking the ground beef (skip if using canned stewed tomatoes)
Drain beef and put in with the beans.
Chop tomatoes up into bitesize pieces and put in with the beans.
Add chilli powder and paprika and stir well.
Cook on stove on Medium heat for about 2 hours or in the crock pot for about 5 hours on Low heat.
