Rhubarb Slush

Ingredients
4 cups diced rhubarb4 cups water1 cup sugarMixes well with diet gingerale
Directions
Boil rhubarb and water. Once the rhubarb is soft drain and mix the juice with 1 cup sugar. Once the sugar is dissolved freeze.
To enjoy, scoop approx 1 cup slush into a blender and add gingerale until desired consistency is met. I usually have approx 1 cup slush to 1/2 can gingerale
For an indulgement add some rum :o)

For the leftover pulp - I use it to make a rhubarb crisp. It isn't as strong in acid then. I will share that recipe too!
