Banana Nut Muffins

Ingredients
1 stick butter or margarine1 cup splenda baking blend /.5 cup sugar and .5 cup splenda1.5 cups wheat flour1 teaspoon baking sodadash of salt1/2 cup egg beater or other liquid egg substitute (equivalent of 2 eggs)1 teaspoon vanilla extract1 cup mashed bananas1/2 cup fage 0%1/2 cup pecans or other nuts chopped (optional)
Directions
Preheat oven to 350 and grease muffin tins.
Cream butter and sugar together in large bowl. Add dry ingredients. Add egg beaters and vanilla. Add mashed bananas, fage, and chopped nuts. Evenly distribute amongst muffin tins. (about 2/3 full) Bake for 45- 50 minutes or until a toothpick inserted in the middle of a muffin comes out clean. Makes 22 large muffins.
