Frozen Bites

Ingredients
12 vanilla wafer cookies,1/2 cup vanilla yogurt1/2 cup Neufchatel cream cheese softened1 t lemon juice1 t honeyOptional: sliced kiwi, strawberries or whole blueberries.
Directions
Place liners in a mini-cupcake pan. Put a wafer cookie in the bottom of each.

In a medium-size bowl, whisk together yogurt, cream cheese, lemon juice and honey until smooth.

Spoon 1 heaping Tablespoon of top of each cookie. (Top with optional fruit.)

Cover the pan with plastic wrap and place in freezer until firm, about 1.5 hours.

    I double everythingsince my mini muffin tin holds 24. I had so much batter left over,are you sure this is suppose to be mini? I also thought it was very lemony but still good. I topped mine with chocolate chips. I will try these again without the lemon. - 4/18/11

    Had these at my sister's house, not even realizing the recipe was much healthier than the birthday cake she was serving! Her substitution was to use a strawberry yogurt instead of vanilla, but it was still delicious. Will definitely make in my own house! - 4/13/11
