4 Beets, raw, sliced1/2 onion, thinely sliced DRESSING3 tbsp Olive oil3 tbsp Balsamic Vinegar1 tbsp waterSalt, to tasteBlack pepper, to taste
Stew the beets in an expres cooker during 20 minutes, then peel them with running water and slice them, let them cool in a plate.
Slice the onion. Add the dressing.
Dressing: Mix the olive oil, the balsamic vinegar, and water (to lower the acid flavor of vinegar) with salt and black pepper to taste.
For better results: Cool at the fridge 1 hour before serving
