Savory Turkey Meatloaf

1 lb. ground turkey 1 lb. ground turkey sausage1 cup soft whole wheat bread crumbs 1/2 c. carrots, shredded1/2 c. celery, finely chopped1/4 c. onion, finely chopped1/4 c. green pepper, finely chopped1 15-oz can petite diced tomatoes1 garlic clove, pressed2 eggs, slightly beaten1 tsp. parsley flakes1 tsp. dry mustard1/2 tsp. salt1/2 tsp. pepper6 tbsp. ketchup1 tsp. worcestershire sauce1/2 - 1 tsp. liquid smoke (opt)
Mix all but the final 3 ingredients in a large mixing bowl until well blended. Place into a 9x5 in bread loaf pan. Bake for 30 minutes. While baking, mix ketchup, worcestershire sauce and liquid smoke in small bowl. Remove meatloaf to drain juices and top with ketchup mixture, then return to oven for remaining 30 minutes. Makes 8 meaty (1-inch) slices.
