Rumbamel's Peachy Sweet Potatoes

Ingredients
-1.5 lbs of sweet potatoes, chopped-2 small fresh and ripe peaches, chopped-2 T light brown sugar-1/2 t ground cinnamon-1 T Smart Balance Omega Light Buttery Spread
Directions
--Cut and cook your sweet potatoes as you like them. Towards the end of cooking, add your peaches so they can sweeten in the cooking processs, almost caramelize.

--All the remaining ingredients and either mash with a mash or puree in batches in a food processor until desired consistancy.

--Makes about 4 cups or 8 servings of 1/2 C each.

--Enjoy!!
