Oatmeal Peanut Butter Bars

Ingredients
1 c Sugar1 c Packed Brown Sugar1 c Butter, softened1 t Vanilla Extract3 eggs1 c Creamy Peanut Butter2 c Quick Rolled Oats2 c Whole wheat flour1 t Baking Soda1/2 t Salt1 1/2 c Peanut or Almond butterFROSTING1/2 c Butter, softened4 T Cocoa Powder6 T Milk5 c Powdered Sugar
Directions
Cream together sugar, brown sugar, and butter. Add vanilla, eggs, and peanut butter and blend until smooth. Mix in the oats, flour, soda and salt. Press dough into a cookie sheet and bake for 15-20 minutes, or until golden brown. Remove from oven and top with the additional 1.5 cups peanut/almond butter while hot. Allow to cool completely before frosting.

While the peanut butter dough is cooling, whip together the butter and cocoa powder. Add milk and vanilla and cream for 1 minute. Add the powdered sugar one cup at a time. Frost cooled dough and cut into 36 bars.

Serving size, one bar.
Yields 36 bars.

    I used Splenda and Splenda brown sugar Better N Butter as substitues and that lowered the calories by a lot, just have to do this for diabetics in the family, they loved them. Thank you. - 7/21/10
