Homemade Granola Cereal

Ingredients
8 cups old-fashioned or quick-cooking oats1/2 cup chopped pecans1/2 cup packed brown sugar2 Tbsp plus 1 tsp water1/4 tsp salt1 tsp maple extract1 tsp vanilla extractFresh or dried fruit, optionalYogurt or milk, optional
Directions
Combine the oats and pecans in a large bowl. In a small saucepan, stir together the brown sugar, water, and salt. Cook over medium heat until sugar is dissolved, 3-4 minutes. Remove from heat and stir in extracts. Pour over oats and stir to coat. Transfer to two greased 15x10 baking sheets. Bake at 350 10-15 minutes or until golden brown, stirring every five minutes. Transfer pans to wire racks and cool completely. Store in an airtight container.
