Avocado Egg Muffin Breakfast Sandwich

Ingredients
1/3 cup light or reduced fat mayo (=5.2 tbs)1 TBS chopped cilantro1 TBS chopped shallot (onion will work)2 tsp lemon juice1 tsp lemon rind6 slices turkey bacon1 omega 3 egg1 ww english muffin
Directions
Mix first 5 ingredients together for "special sauce"
Toast muffin and spread sauce. Slice avocado and place on muffin. Add divided cooked bacon.
Cook egg in nonstick pan covered until white part is done and center still creamy. Place on top of bacon and cover with muffin.

makes 4 sandwiches.

Note: Only cook 1 slce bacon per sandwich and serve open face without top of muffin to reduce salt and calories.
