4 lbs boneless, skinless chicken breast3 Tbsp. Low fat mayo5 oz. chicken broth (use chick broth from boiled chicken)2 Tsp dried garlic2 Tbsp fresh chopped parsley1 Tbsp dijon mustard1 stalk celery stalk choppedsaltpepper
Boil chicken until just cooked. Save the broth from chicken. When chicken is cooled shred chicken and put aside. In another bowl mix the rest of your ingredients. (You may need more or less chicken broth so add this a little at a time.) Add the shredded chicken to this mixture and chill! Enjoy on low fat wraps w/ lettus and tomatoe or top your salad with it!
