Tex Mex Zucchini Salad with Brown Rice

3 medium zucchini, dicedheat pan w olive oilsauté zucchini until soft 5-8 minJuice of 2 lg lemons - squeeze over zucchini and mix.Put zucchini in a bowl containing:4 cups cooked jasmine rice2c. corn kernels (fresh or frozen, uncooked) 3/4 cup coarse chopped cilantro (or parsley)1 med-lg red pepper, diced1/2 - 3/4 cup scallions (both white and green parts)4 oz green chilies incl liquidput in the bowl and mix up.Add a can of drained black beans.1 Tbs. cumin seeds toasted, grind a bit in mortar. Mix into bowl.Season w/ salt & pepper. Let it marinate together a bit.
