Low Carb Beefed-Up Meatloaf

Ingredients
Tomato Topping:1 (8 oz.) can Tomato Sauce1 (6 oz.) can Tomato Paste2 tsp Apple Cider VinegarMeatloaf Mix:1 Lb Lean Ground Beef1 Lb Lean Ground Turkey2 Eggs1/2 cup Parmesan, grated1/4 cup Red Onion, diced small1/4 cup Red Bell Pepper, diced small2 Tbsp Fresh Parsley Leaves, chopped fine2 cloves Garlic, minced1 tsp Oregano, dried1 tsp Basil, dried2 tsp Salt1 tsp Black PepperFilling:1/4 Lb Prosciutto (or any type of ham), thinly sliced1/4 Lb Provolone Cheese, sliced
Directions
Preheat oven to 350 degrees F.

In a small bowl, mix together the tomato topping ingredients. Set aside.

In a large bowl, mix together meatloaf ingredients.

Working on waxed paper, form meatloaf into a 10"x8" flat rectangle. Place layer of prosciutto slices on top. Top prosciutto with a layer of provolone slices. Roll up the rectangle (like you would a jelly roll or burrito) and seal ends by pinching meat (to keep cheese from oozing out during baking).

Place the roll, seam side down, into a 5"x9" loaf pan. Spread the tomato topping over entire loaf.

Place pan in oven and cook for 1 hour and 25 minutes or until meat temperature is 165 degrees F. Drain fat and let rest for at least 10 minutes before slicing.

    we enjoyed the meatloaf...I used ground turkey and pok as I didnt have the beef though I will try again with the beef and I used hunts pizza quick sauce insted of tomato sauce for added flavor and less carbs and it was great! - 8/7/07
