Banana Zucchini Nut Bread

Ingredients
4 large eggs2 cups sugar1 cup Smart Balance Omega-3 Oil2 medium ripe bananas (about 1 cup)1 1/2 cup white flour1 1/2 cup whole wheat flour1 1/2 tsp baking powder1 1/2 tsp baking soda1 1/2 tsp ground cinnamon1 tsp salt1 1/2 cup shredded unpeeled zucchini1 cup chopped pecans
Directions
In a bowl, beat eggs. Blend in oil and sugar. Add bananas and mix well. Combine the flour, baking soda, baking flour, cinnamon and salt; stir into egg mixture. Stir inzucchibi and pecans just untill combined.

Pour into two greased 9-in. loaf pans. Bake at 350 degrees for 50 minutes or until a toothpick comes out clean. Cool for 10 minutes. Remove from pans to wire racks to cool completely. Yield: two loaves.

Freezes well.
