Colorful Coleslaw

Ingredients
Savoy Cabbage- Shredded- 2 cups (approx 1/2 head)Greeen Cabbage-Shredded- 2 cups (approx 1/2 head)Red Caggage- Shredded-2 cups (approx 1/2 head)Carrots- Grated or Shredded- 2 cups1 of each Red, Yellow, Orange Bell Pepper- cleaned out and cut into small stripsFresh Chives- Chopped- 6 tbsp or one bunchLight/ Low-Fat Mayo- 1 CupDijon Mustard- 2 tbspStone Ground Mustard- 2 tbspApple Cider Vinegar- 2tbspJuice from 1 lemonWhite and Black Pepper- 1tsp or to tastePaprika- 1tsp
Directions
Combine the cabbage, carrots, peppers, and chives into a large bowl and toss.
In a separate bowl combine all the other ingredients and mix well.
Pour dressing over vegetables and toss until well coated.
