2 cans fire roasted tomatoes1 cup tomato juice1 packet McCormic dressing mix fiesta ranch 1 can pinto beans (drained and rinsed)1 can black beans (drained and rinsed)1 can kidney beans (drained and rinsed)1 can fiest corn (drained and rinsed)1 small onion diced and sauted in olive oil1 chicken breast cooked and chopped into small pieces
in a large pot mix in the tomatoes, tomato juice, beans, corn, cooked chicken breast, and fiesta ranch packet. In a small skillet saute onion in 1 tbs olive oil, then add those to the soup and cook until comes to a boil. serve. its great with brown rice, or sour cream (can use plain yogurt instead of sour cream)
