Chicken and Krab with peppers (8 servings)

2 large shallots sliced thin3 large cloves garlic sliced thin1 large cubanelle pepper large dice1 yellow pepper large dice1/2 Cup roasted red pepper large dice1 Cup frozen peas thawed16 oz cooked chicken diced8 oz imitation crab diced3 tablespoons fresh tarragon roughly chopped3 tablespoons lemon basil roughly chopped1/2 Cup white wine
Spray nonstick pan with cooking spray and lightly saute shallots and garlic until fragrant.
add cubanelle and yellow peppers and cook until tender crisp
add roasted pepper, chicken, and imitation crab and peas and cook until warmed
add white wine and simmer until wine is reduced by half
add herbs and stir well
serve over penne or other pasta or rice hot or cold
optional: if you don't have lemon basil use regular and 1 Tablespoon of fresh lemon juice
