Ed's Pepper Steak

Marinade - Fish Sauce, 1/2 Corn Starch, Crushed Black PepperCooking Sauce - Balance of Corn Starch, Black Pepper, Soy Sauce ,Sugar,Sherry,Beef Broth

Prepare rice ahead of time
Slice Beef Thinly against the grain on a bias, pound to tenderize...mix marinade combine in bowl & set aside.
Chop Peppers 1/4 inch strips.
Use Wok pan or deep pot that will hold meat and liquid...turn on high and when up to temp add wok oil then red & yellow peppers mix constantly...after a minuite or so splash peppers with a tablespoon or so of water cook for a min. or so til peppers are still firm but cooked.
Remove peppers to a deep serving dish allow pot to regain high temp.
Add remaining Wok oil and meat let sizzle for 30 sec start moving meat around the pot (2 to 3 min.) til it's browned add the garlic & ginger stir another 30 sec. then add the cooking sauce...bring to a low boil, let low boil for a few min. then pour over the peppers. Dish out your rice pepper steak on top and you're in business.
(if you like thicker sauce simply mix in another container water & corn starch and add to the pot little by little til it thickens)
