Zucchini Lasagna without Pasta

1 zucchini, sliced like lasagna pasta1 cup tomato sauce1 onion, chopped1 clove garlic, chopped1 carrot, chopped1/2 cup frozen spinach, thawed4 tbsp fat-free ricotta cheese1 tsp olive oil2 tbsp parmesan cheese
Heat olive oil in skillet. Saute the onion, garlic for about 5 minutes. Add the carrot, cook for another 2 minutes. Add the thawed spinach, then add in the tomato sauce and cook until heated through. You can add water to thin the sauce out if it is too thick. In a baking dish, spread some tomato sauce on the bottom so the zucchini doesn't stick. Then layer zucchini slices, ricotta cheese, and tomato sauce as high as you can. Top off with more tomato sauce and parmesan cheese. Bake in a 350-400 degree oven for 20-25 mintues, until the zucchini is fully cooked. mm mm mm...
