6 bone in, skinless chicken thighs5 garlic cloves, smashed1 tbsp lemon zest1/3 cup lemon juice1/3 cup low fat/low sodium chicken broth1 tbsp cornstarch1 cup packed baby spinach
trim chicken thighs of any excess fat. Place them in the slow cooker owl and scatter garlic cloves over top. In a small bowl, stir together the lemon zest, juice and the chicken broth; pour half of it into slow cooker. cover and cook for 3 hrs on high or 5 hrs on low. remove chicken thighs to a platter and keep warm; discard garlic cloves. in a small bowl, stir together remaining lemon juice mixure, cornstarch, salt and pepper. whisk into slow cooker bowl with chopped spinach and ook another 30 min on high or low. you can serve it with whole wheat pasta which would add about another 180 cal per serving.
