Tuna & White Bean Salad

Ingredients
1 green onion, sliced2 cans (5 oz each) white albacore tuna in water, drained4 T white wine vinegar1 T spicy brown mustard1/4 cup olive oil1/4 tsp salt1/4 tsp pepper1 T fish sauce1 can cannellini beans, rinsed and drained1 can white northern beans, rinsed and drained2 medium tomatoes, diced
Directions
Mix oil, vinegar, mustard, salt, pepper, and fish sauce in the bottom of a mixing bowl with a fork until blended. Toss in tuna, tomatoes, onion, and parsley. Gently fold in beans and mix until combined. Makes 6 servings.
