Tipsey Shrimp

1 small onion8 cloves garlic3 TBSP olive oil1 lb. raw shrimp - peeled2/3 C dry white wine1 tomato diced fine1 tsp sea salt (can substitute Kosher Salt)Grated aged cheese (Parmesan, Romano or Peccarino
In a large saute or fry pan:
Saute diced onion for 2 minutes in 3 TBSP olive oil.
Add 8 garlic cloves crushed and continue sauteing for 2 minutes.
Turn up heat.
Add shrimp - saute 2 minutes (if using large shrimp cook longer)
Add wine & continue cooking for 2 minutes, or until wine is beginning to evaporate
Add diced tomato - cook for 2 minutes
Serve over rice or linguini and sprinkled with Parmesan or grated cheese.
