Green Tea Coconut Cake

2 cups unbleached all purpose flour30 packets PureVia (or other stevia sweetener)3 egg whites1 cup low-fat vanilla yogurt1 cup coconut oil1 tsp baking soda1/4 tsp salt1 tsp vanilla extract4 green tea bags1/2 cup water
Preheat oven to 350 degrees. Grease a 9x13" baking sheet (or two 9-in pans) and lightly flour.
Boil 1/2 cup water and add tea bags. Let steep for 5 mintues and reach room temperature.
In a large bowl, combine all dry ingredients. In a separate bowl, combine all wet ingredients including tea.
Add wet ingredients to dry ingredients and gently mix until smooth. Pour into pan and bake at 350 for 15 minutes or until it passes the clean toothpick test.
Makes 16 servings.
