Patch Eggplant Pizza

Ingredients
1 small eggplant, unpeeled, cut into 1/2" slices1/2 cup shredded cheddar1/4 cup chopped tomatoesseasoned to taste with Paula Deen's House Seasoning (mix of black pepper, salt and garlic powder)
Directions
Slice eggplant and bake at 425 for about 10-20 minutes, flipping halfway.
After baking, top with chopped tomatoes, cheese and seasoning and bake at 400 for 10 more minutes.
