Sweet Potato Summer Salad

Ingredients
2 Sweet potatos3 celery stalks1/2 English cucumber with peel 1/2 cup chopped cilantro 1/2 cup nonfat plain or greek yogurt3 tbsp lemon juice2 tbsp white vinegarBasil (or prefered herb to taste) 1/2 cup sunflower seeds, salted or not (preference)
Directions
cube sweet potatos and boil them until just tender; remove, strain, and rinse with cold water. Set them in the fridge.
Cube cucumber and chop celery; combine them with the cilantro, lemon juice, and vinegar.
Mix herb of choice (basil) into the yogurt.
Combine everything, add sunflower seeds and yogurt mixture. Chill and serve.
