1 T olive oil 2 cups zuchhini 1 pound mushrooms 3 scallions2 T flour 1 cup chicken broth 1 T worstershire sauce 1/2 t dried thyme salt and pepper to taste 1/2 cup light sour cream or yogurt 2 cups large bread crumbs (use large bread crumbs or cut amount in half)1/2 cup parmesan cheese
Preheat oven to 350 degrees. Chop into small pieces the zuchhnini, mushrooms and scallions and cook for 10 minutes in olive oil, add flour and stir for 2 mintures, add chicken broth, worstershire sauce, thyme, salt and pepper and stir for 4-6 minutes till thickened. remove from head and add sour cream. place in casserole dish and cover with bread crumbs and cheese- bake for 30 minutes - makes 8 half cup servings
