Chia Granola

2 cups rolled oats1/2 cup raw chia seeds3 tbsp raw agave nectar3 tbsp raw coconut oil1/4 cup goji berries1/2 cup slivered almonds2 oz cacao nibs3 dates, pitted and chopped
Preheat oven to 250 degrees F.
Combine all ingredients EXCEPT cacao nibs and goji berries in a bowl. Pour onto a cookie sheet and bake for 15 minutes. Remove from oven, stir, and place back in oven. Repeat this every 15 minutes for one hour or until lightly golden. Keep an eye on it so it doesn't burn!
Remove from oven and add goji berries and cacao nibs. Mix. Let cool completely, then store in an air-tight container.
Makes sixteen 1/4-cup servings.
