Omega Energy Oat Bars

Ingredients
Pumpkin Seeds, 1 cup Sunflower Seeds, without salt, 1 cup, hulled **Flax Seed, 8 tbsp Shelled Hemp Seeds, 1/2 cupUnsweetened Coconut, 1 1/2 cup*Black Currants, dried, 1.5 cup Oats, 3 cup Dates, 375 grams Cocoa, dry powder, unsweetened, .5 cup *applesauce unsweetened Motts 220g
Directions
It's the easiest thing ever... mix up all the seeds and things in a big bowl. Simmer your dates until soft and blend (without the water) in a food chopper/processer with applesauce. Add to seed/oat/dried fruit mix and blend thoroughly. Pat onto a lined baking sheet and let cool (they'll be warm and soft from the hot dates). I cut them into 27-36 bars, but whatever size you want works. Makes 9 cups.
n.b. Also makes GREAT crumble over fruit or ice cream.
