Spiced Pilau Rice (Delia)

Ingredients
Basmati Rice - measured to the 10 fl oz level in glass jugBoiling Water - measured to the 20 fl oz level in glass jug1 tablespoon oil1 small onion, finely chopped2 cardamom pods1 whole cinnamon stick3/4 teaspoon cumin seeds1/2 teaspoon coriander seeds2 teaspoons turmericSalt
Directions
Crush the cumin & coriander seeds in a pestle & mortar. Heat the oil in a large frying pan (with a lid) and fry the onion until golden. Stir in the spices. Stir in the rice until nicely coated with oil, then pour in the boiling water. Stir once only, put the lid on, turn the heat down to its very lowest and cook for exactly 15 minutes.
