Carrot Souffle

Ingredients
1 Lbs carrots, slicedSalt to test1 Stick margarine1/2 cup sugar1 tsp baking powder3 tbsp flour3 eggs1 tsp vanilla extract
Directions
In a sauce pan, cover carrots with water, add salt and cook untl tender; drain.
Combine with margarine in blender or food processor. Process until smooth. Combine sugar, baking powder, flour, eggs and vanilla extract in bowl; mix. Add carrots misture and mix well. Spoon into a greased baking dish and bake at 350 degrees 45 to 60 minutes, or until nicely browned.
