Ingredients
* *Potato, raw, 5 cup diced (remove) * Neufchatel Cheese, 8 oz (remove) * Onions, raw, 1 cup, chopped (remove) * Garlic, 3 cloves (remove) * Ginger Root, 1 tsp (remove) * Olive Oil, 1 1tsp (remove) * Allspice, 1 tsp (remove) * Turmeric, ground, 1 tsp (remove) * *Lemon Juice, .0416 cup (remove) * Red Ripe Tomatoes, .5 cup, chopped or sliced (remove) * *Whole Wheat Tortilla, 6 serving (remove)# Peas, frozen, 0.5 cup (remove)
Directions
Boil potatoes till soft. Combine in a bowl with neufchatel and mash. Sautee onion, garlic, and ginger in oil till onions are translucent. Add spices and mix well. Add to potato cheese mixture and add lemon juice, tomatoes, and peas. place in tortillas and roll up.

Moosewood recommends baking. It's easier and faster to not bake them...your choice. If you prefer to bake 350 oven for 15 - 20 minutes until crisp.

    I made it with 4 tsp curry powder instead of the other spices and also used 2 tsp ginger. I also substituted 0.5 cup frozen peas for the tomatoes. It was phenomenal! - 1/7/13
