Denver Omelettes

Ingredients
1/2 Cup Diced Onions1/2 Cup Diced Bell Peppers (Different colors if desired)1/2 Cup Diced Ham1 Cup Shredded Cheese12 Large Eggs
Directions
Saute' the peppers and onions until soft. Stir in the diced ham. Transfer this filling to a plate or medium bowl. Use three eggs for each omelette. Whisk together three eggs in a small bowl, pour them into a 12" non-stick skillet. Allow the eggs to cook halfway and top with 1/4 of filling mixture and 1/4 of the cheese if desired. Carefully fold the omelette together. Allow to cook until lightly brown on bottom, turn and cook a bit more to ensure no raw egg is left.
