Coconut Cream Shooters

Ingredients
1 small pkg. Kraft Jell-o fat free sugar free Vanilla Pudding 2 cups Non Fat MilkHoney Maid Grahams, 1 full sheet (4 crackers) 1/2 oz. Toasted Coconut2 oz. Coconut Extract8 T. Cool Whip Free
Directions
Toast coconut and set aside to cool. Mix the pudding mix, 3/4 of the coconut, extract, and milk together. Based on 1 graham cracker per dish; crush graham cracker and place half the crumbs at the bottom of a 1 cup dessert dish. Spoon in 1/8 of the pudding mixture. Sprinkle the other half of the cracker crumbs on top of the mixture. Spoon in another 1/8 of pudding mixture. Repeat with 3 more 1 cup dessert dishes. Place 2 T. of cool whip on top of each dessert. Divide and sprinkle the remaining toasted coconut on top of the whipped topping.
Makes 4 1/2 cup servings.
