Asian Chicken Noodle Salad with Snap Peas

Ingredients
8 oz. package sugar snap peas strings removed1 8 - 9 oz package of Japanese style noodles - (such as Udon)1 tablespoon Asian Sesame Oil2 grilled chicken breast - cut horizontally in half then crosswise into thin strips6 green onions thinly sliced1 cup Mango Sesame DressingToasted sesame seeds are optional
Directions
Serves 4 -

Cook snap peas in boiling salted water until crisp-tender - 2 minutes - transfer to bowl with slotted spoon.
RETURN water to boil. Add noodles. Cook until tender (as directed on package). Drain; rinse under cold water until cool. Transfer to large bowl. Toss noodles with sesame oil. Cut noodles with kitchen shears to shorten. Add peas, chicken and green onions; toss with enough dressing to coat - Arrange salad on platter; top with toasted sesame seeds if desired.

MANGO SESAME DRESSING - LISTED SEPARATELY IN MY COOK BOOK IS THE DRESSING YOU WILL NEED TO PREPARE - Dressing makes 2 Cups - use only 1 Cup of the dressing.
