Thai Green Chicken Curry

Ingredients
Thai Green Curry Paste- any brandLight Coconut Milk- Canned is fineChicken breasts
Directions
makes 6 small, or 4 large servings.
1. Cut up Chicken breasts into bit sized even pieces
2. Fry up in a large pan with deep sides in low cal cooking spray until browned
3. Add 2-3 tablespoons of Thai Green Curry Paste and stir/keep cooking for another 2 min
4. Pour in 200ml of light coconut milk, bring to the boil, then let simmer for 20min or so until sauce has thickened
Great served with rice
