Chocolate-Exspresso Cake

1 cup all purpose flour2/3 cup sugar1/3 cup + 1 Tbsp. unsweet baking cocoa divided2 tsp.baking powder1/2 tsp.salt1/2 cup water2 Tbsp.veg.oil1 cup light brown sugar packed1 3/4 cups hot exspresso *note instant exspresso coffee powder or regular instant coffee mixed with water may be used in place of brewed exspresso.
1. Heat oven to 350 F Spray an 8 x 8-inch glass baking dish with cooking spray.In a med. bowl wisk together the flour,sugsr,1/3 cup cocoa,baking powder and salt.Whisk until smooth.Spread in the pre-pared baking dish.
sprinkle with brown sugar and remaining 1 Tbsp.
cocoa powder.SLOWLY pour coffe over batter.
2.Bake for 40 minutes or until toothpick inserted
Partway down comes out clean.Let stand about 30 minutes serve warm
