Lower Fat Poppy Seed Chicken

2 cans 98% fat free cream of chicken soup1-8 oz reduced fat sour cream1.5ish lb of chicken breast 1 sleeve of whole wheat ritz crackers3 T of margarine like spread 40% fat melted2 T poppy seeds
Boil your chicken w/ a bit of salt and pepper and poultry seasoning for 15-20 minutes.
Cut chicken into bite size pieces or shred.
In a baggie crush the crackers and pour the melted margarine and shake up to mix it.
Combine chicken, sour cream, and soups. Pour into greased 9x13 casserole dish.
Sprinkle the crushed crackers all over the top.
Sprinkle poppy seeds on top of crackers.
Bake 350 for approx. 20-30 minutes or until bubbly.
Makes approx. 6 1 cup servings.
