Heather's Delicious Lentil Soup

Ingredients
1 T. Extra virgin olive oil1 medium onion, chopped2 large carrots, sliced or chopped2 stalks celery, chopped2 cloves garlic, minced1 ½ cups lentils, well rinsed2 quarts stock (I used 1/2 vegetable and 1/2 chicken)Pinch thyme
Directions
In stock pot, heat olive oil on medium-high heat. Add onions and saute until soft. Add garlic, carrots and celery and saute until soft. Add remaining ingredients and bring to a boil. Reduce heat to low and simmer, partially covered, for 30 - 45 minutes or until lentils are tender.
