Carrot Raisin Salad

Ingredients
1 1/2 cups shredded carrots 1/4 cup raisins 2 Tbsp light mayonnaise 2 Tbsp Greek yogurt1/2 tablespoon lemon juice 1 Tsp. honeyDash salt *Optional: 1/2 cup chopped apple, or well drained crushed pineapple, or 1/4 cup chopped celery (not included in nutrition information)
Directions
Soak the raisins in a cereal bowl of warm tap water. This plumps them up so they taste better in the salad. After soaking for a few minutes drain them and squeeze them dry with your hand. In a medium sized mixing bowl, combine the yogurt, mayonnaise, lemon juice, honey and salt. Add the carrots and raisins and stir well. Add one or more of the optional ingredients if you feel so inspired. Mix it all up and chill it until serving time.

    I don't ever get carrot salad if I see it on a buffet. Just never appealed to me. This looked like a good thing to go with some leftover chicken spinach lasagna I am serving to a friend. I just finished mixing it up. I had to use a bit of lime juice instead of lemon. YUM!! - 10/15/09

    This was a great side item. A little sweet so could even help with a sweet craving. I changed a few things. Not so heavy on the raisins. I also used 1/4 plain greek yogurt and 1 tbl omega 3 mayo and that was more than enough very creamy and splenda brown sugar. Also only had lime juice.YUM - 5/7/09
