* Flour - White Champion Standard white, 480 gram(s) 850ml * Baking Powder, 1 tbsp 15ml * Cocoa Powder - Pams, 5 gram(s) 15 * Salt, 1 dash 1ml * Brown Sugar, 120 grams 150ml * Sultanas - Pams, 100 gram(s) 100ml * *Milk, 2%, 5 fl oz 150ml * Egg, fresh, 2 large beaten * Flora Light Margarine, 125 gram(s) * Sour Cream, .75 cup 150ml
Preheat the oven to 190 degrees C. Spray muffin tin (12 large hollows) with nonstick spray (or margarine). Sift the cake flour baking powder, cocoa and salt together in a large mixing bowl. Add the brown sugar and sultanas and mix. Mix the milk, eggs, butter and sour cream together and add the mixture to the dry ingredients, mixing lightly. Turn the batter into the muffin tins, filling each hollow until level. Bake for 20 minutes or until a testing skewer comes out clean when inserted int the centre of the muffins. Cool for 5 minutes in the tine before turning out onto a wire rack. Makes 12-15 muffins
