Grilled Buffalo Chicken Cordon Bleu

* Perdue Boneless, Skinless Chicken Breast, All Natural, 1 filet, 4.8 oz., 4 serving * Ham, extra lean, (5% fat), 4 slice (6-1/4" x 4" x 1/16") * Blue Cheese, 4 oz * Butter, salted, 3 tbsp * Hot Pepper Sauce, 1 cup
slice chicken horizontally to create a pocket and pound out a bit to flatten out. Fill each pocket with slice of ham and 1 oz of bleu cheese. Close and pinch to seal season w/salt and pepper to taste. Grill 6-8 minutes on each side turning carefully until chicken is no longer pink. Meanwhile melt butter and mix with hot sauce (preferably Franks red hot. Transfer cooked chicken into sauce and turn to coat. Serve with chopped salad of farm fresh veggies with blue cheese vinegrette (calories not included in this recipe) or slice chicken and serve over a bed of your favorite salad greens! Yummy!
