Grilled Vegetable Sandwiches

Ingredients
3 large sweet red peppers3 medium red onions3 large zucchini1/4 cup olive oil3/4 tsp salt3/4 tsp coarsely ground pepper1/3 cup minced fresh basic2 Tbsp. lemon juice6 garlic cloves, minced12 hamburger buns12 slices of cheddar cheese3 medium tomatoes, sliced3/4 cup hummuscooking spray
Directions
Cut the red peppers into eighths; cut onions and zucchini into 1/2-in slices. Spray vegetables with olive oil cooking spray (you can also brush with olive oil if you prefer), sprinkle with salt and pepper. Grill vegetables in batches, covered, over medium heat or broil 4 inches from the heat for 4-5 minutes on each side or until crisp-tender. Cool.

Combine the mayonnaise, basil, lemon juice, and garlic; spread over bun bottoms. Layer with cheese, grilled vegetables, and tomatoes. Spread hummus over bun tops; replace tops.
